traditional anzac biscuits

Sometimes, the food we eat isn’t just about ‘being healthy’ or ‘making a healthy version’. Food is also a cultural tool to celebrate and commemorate out past, present and future. So, rather than trying to change a tradition, in the spirit of the ANZAC day, we have decided to source a traditional ANZAC biscuit recipe from The Australian War Memorial:

The Country Women’s Association of New South Wales Calendar of Cake and Afternoon Tea Delicacies: a recipe for each day of the year (Sydney: The Association, 1933) included two recipes for Anzac biscuits, one without coconut and another version which included coconut.

Enjoy this delicious recipe and remember the history of it’s tradition. Remember those who fought and died for their country. Lest we forget!

ANZAC Biscuits

Ingredients
  

  • 2 cup oats, rolled
  • ½ cup sugar, white
  • 1 cup flour, white, plain
  • 125 g butter melted
  • 1 tsp golden syrup
  • 2 tbsp water boiling
  • 1 tsp bicarbonate soda (add a little water if the mixture is too dry)

Instructions
 

  • Preheat oven to 160 degrees celsius.
  • Combine dry ingredients.
  • Mix golden syrup, boiling water and bicarbonate of soda until they froth. Add melted butter.
  • Combine butter mixture and dry ingredients.
  • Make 24 biscuits by dropping spoonfuls of mixture onto a floured tray, allowing room for spreading.
  • Bake in a slow oven for 15-20 minutes (or until nicely golden).
