Couscous is a great source of carbohydrates to help fuel your morning, and the 9g of protein and 6g of fibre will help keep you feeling fuller for longer. The added bonus is that it’s very low in fat with just 1g per serve! Make the most of fresh berries while they’re in season. They are a great source of vitamin C and folate, which plays an important role in red blood cell production.

Apple & Mint Couscous with Mixed Berries & Yogurt

Ingredients
  

  • ½ cup juice, apple
  • ½ cup couscous, wholemeal, dry uncooked
  • bunch mint, fresh chopped
  • ½ cup blueberries
  • ½ cup raspberries
  • 6 strawberries, fresh sliced
  • 200 g yoghurt, any soy for vegan option

Instructions
 

  • Bring the apple juice to the boil in a saucepan.
  • Once it has boiled, remove it from the heat and add the couscous and mint leaves.
  • Place a lid on the saucepan and let it stand for 2 mins.
  • After 2 mins, return to low heat and use a fork to break up the clumps of couscous.
  • When the couscous is no longer forming clumps it is cooked.
  • Divide the couscous into 2 bowls, top with the berries and serve with a dollop of vanilla yoghurt.
