Avocado, Pear and Haloumi Salad
Recipe Serves 4 people
Ingredients
- 400 g spinach, baby
- 1/4 onion, red thinly sliced
- 1 avocado thinly sliced
- 1 pear quartered and thinly sliced
- 40 g almonds, slivered
- 1/2 pomegranate optional, seeds only
- 320 g cheese, haloumi sliced into 1/2cm pieces
- 1 lemon juiced
- 1 bunch parsley, flat leaf, fresh flat leaf, finely chopped
- 1 tsp sugar, caster
Instructions
- Divide the baby spinach, onion, avocado, pear and almond slivers evenly amongst 4 dinner plates.
- To make the dressing combine the lemon juice, sugar and parsley in a bowl and combine. Set aside.
- Heat a non-stick fry pan over medium heat. Grill haloumi for 2-3 minutes each side or until golden in colour. Remove from the pan and immediate add to the salad.
- Sprinkle with pomegranate seeds and drizzle with dressing. Serve and enjoy!
