Chocolate Mandarin Bites

Equipment

  • Mini paper paddy pans

Ingredients
  

  • 100 g chocolate, dark melted (leave 2 squares aside to grate)
  • 2 mandarins peeled and sectioned
  • 125 g cheese, ricotta, regular
  • 1 tsp vanilla essence
  • 2 tbsp cream cheese
  • 1 tsp sugar, caster

Instructions
 

  • Melt the chocolate in a microwave safe dish for 1-2 minutes. Stop and stir the chocolate every 30 seconds.
  • Dollop 1 tsp of chocolate into 16 paddy pans, and swirl the chocolate around so it slightly goes up the sides of the paddy pans. Freeze immediately to set for about 20 minutes.
  • Meanwhile, in a food processor, mix the ricotta, cream cheese, grated chocolate, sugar and vanilla essence until consistent and smooth.
  • Peel the paper paddy pans off the chocolate and dollop 1 tsp of the cream cheese mixture onto the chocolate. Top with a mandarin slice and serve immediately.
