This delicious, vegetarian food combination is a fantastic lunch or light evening meal. Rich in quality carbohydrates, vegetables and protein, you can whip this up in less than 10 minutes. Feel free to swap the goats cheese for haloumi and drizzle with lemon juice or red wine vinegar. It’s also a great side salad for a BBQ’d steak if you’re after a bit more protein.
Goats Cheese and Bean Salad
Recipe Serves 2 people
Ingredients
- 140 g cheese, goats cubed
- 400 g beans, 4 bean mix, canned drained and rinsed
- 120 g sugar snap peas (2 cups)
- 120 g beans, green (2 cups)
- 40 g almonds, flaked lightly toasted (2 tbsp)
Instructions
- Cover sugar snap peas and green beans in boiling water and leave for 2 minutes. Drain.
- Toss the 4 bean mix, sugar snap peas, green beans and goats cheese together in a bowl.
- Divide onto two small dinner plates, sprinkle with almonds and serve. Enjoy!
