With the start of the new school year in full swing, I know that many parents are after new and creative ways to put healthy food in their child’s lunchbox.

I’m a big believer in keeping things simple, especially for school lunch boxes, and that healthy eating doesn’t need to be more complicated than vegetable sticks, a tub of good quality yoghurt, a wholemeal sandwich with chicken, cheese, tomato and lettuce and a piece of fruit.

If you’re finding the daily grind of making school lunches a bit tiresome and boring, then check out our lunch box ideas article for more inspiration!

Every now and then, it’s nice to make something extra special for your child’s lunchbox.

This Goji Choc Oat Slice is a delicious, yet healthy lunchbox treat, which is nut free and easy to whip together on a weeknight or weekend. It’s got a good variety of nutritious ingredients making it much healthier than you’re average brownie plus the taste means you’re kids will absolutely love it! I’m pretty sure you will too! It’s fab with a cup of tea!

With the goodness of oats, the antioxidants of goji berries, the fibre of wholemeal flour, the healthy fats of seeds and the taste of coconut and choc chips, it’s a winner of a recipe! You literally chuck it all into a bowl and mix it together. Bake, cool, slice, done! Enjoy!
