Peaches and ham go so well together that it could hardly be a coincidence that peach season happens right when many of us have leftover ham sitting in the fridge waiting to be used up! This recipe takes advantage of that and brings the two together in a super quick and easy salad that packs plenty of flavour. With 18.4g of protein and 7g of fibre per serve it’s also a salad that is going to help keep you feeling full long after you’ve finished the last mouthful.
Ham, Peach and Goat's Cheese Salad
Recipe Serves 2 people
Ingredients
- 2 peach, yellow cut into eighths
- 150 g ham, off the bone, lean portion roughly chopped
- 40 g cheese, goats
- 2 cup spinach, baby
- 1 bunch basil, fresh roughly chopped
- 1 tbsp oil, olive extra virgin
- pepper optional
Instructions
- Grill or BBQ peaches for 5 mins, or until they are starting to brown.
- Toss the peaches, ham, spinach, basil and goat’s cheese together in a bowl.
- Drizzle with olive oil and serve. Season with fresh cracked pepper to taste.
