Homemade Baked Beans

Ingredients
  

  • 1 tsp oil, olive
  • 1 onion, brown roughly chopped
  • 2 clove garlic crushed
  • 1 tsp cumin, spice
  • 1 tsp paprika, spice
  • 1 can tomato, diced, canned
  • 2 can beans, borlotti, canned drained and rinsed
  • 2 tbsp parsley, flat leaf, fresh
  • 4 egg

Instructions
 

  • Heat oil in a deep, non-stick frying pan over medium heat. Add onion to frying pan. Cook, stirring, for 3 minutes or until onion is tender and light golden. Add garlic, cumin and paprika. Cook, stirring, for 1 minute.
  • Add the canned tomatoes and beans. Cook, stirring often, for 5 minutes or until heated through. Season with salt and pepper.
  • Meanwhile, poach eggs in a small saucepan of boiling water.
  • Serve a portion of the beans with a poached egg and a sprinkle of parsley and enjoy!
