These honey and ricotta muffins are a super simple dish. They’re an absolutely delicious idea for breakfast or as a pre-workout snack.
You can also use rye bread, a Burgen style bread, a high fibre gluten free bread or wholemeal sourdough instead of muffins. Swap the ricotta cheese for cottage cheese, the banana for berries and the honey for pure maple syrup. So many combo options!
Honey and Ricotta Muffins
Recipe Serves 1 people
Ingredients
- 1 english muffin, wholemeal split into halves
- 120 g cheese, ricotta, smooth
- 1 banana sliced
- 2 tsp honey
- 10 g almonds, flaked ½ tbsp
- ¼ tsp cinnamon
Instructions
- Toast the muffin halves to your liking in the toaster.
- Top the freshly toasted muffin halves with ricotta, banana slices, a drizzle of honey, a sprinkle of almonds and a light dusting of cinnamon. Serve and enjoy.
