There are some food combinations that just can’t be beaten and mango and haloumi would definitely be my nomination. The salty haloumi and sweet mango is just divine when eaten in the same mouthful! Seriously, if you haven’t tried it before, you must. Add some creamy avocado, peppery onion, baby spinach and a white balsamic vinegar and you’ve got a deliciously tasty and light summer salad that the whole family will love!

Mango and Haloumi Salad

Ingredients
  

  • 160 g cheese, haloumi thinly sliced
  • ½ avocado thinly sliced
  • 1 mango cubed
  • ½ onion, red thinly sliced
  • 4 cup spinach, baby
  • ½ tbsp vinegar, white balsamic

Instructions
 

  • On medium heat, cook the haloumi for 2 minutes, or until golden, on each side.
  • Meanwhile, combine avocado, mango, red onion, baby spinach and white balsamic vinegar in a bowl. Mix thoroughly together with cooked haloumi.
  • Serve and enjoy!
