Mixed Vegetable Slaw with Miso Tahini Dressing

Ingredients
  

  • ¼ cabbage, red shredded
  • ¼ cabbage, white shredded
  • 2 carrot thinly sliced
  • 1 capsicum, red thinly sliced
  • ½ onion, any thinly sliced
  • 1 cup snow peas thinly sliced
  • 1 cup mung bean sprouts

Dressing

  • 3 tbsp tahini
  • 1 tsp miso paste

Instructions
 

  • Place all vegetables in a large mixing bowl.
  • Put a jug on to boil while adding the tahini and miso paste to a small/medium bowl.
  • Once water has boiled, allow to cool slightly before slowly adding water to the miso-tahini bowl and mixing to a preferred consistency.
  • Either add the dressing to the salad bowl and mix through the salad or serve salad and then drizzle the dressing over the top.
