Nachos with a twist

Mexican food is so tasty and it’s actually a great cuisine to help you include lots of fresh whole foods into your diet.

An all time favourite Mexican dish is nachos! This recipe is a healthy twist on the traditional recipe of including corn chips, cheese and sour cream. If you’re looking to up your vegetable intake and decrease your intake of processed foods than this recipe is for you.

The purple cabbage is crunchy, offering the perfect texture to replace the corn chips, plus it’s vibrant colour looks so beautiful on your plate. Purple cabbage is also highly nutrient dense. This means it has lots of vitamins, minerals and fibre and very little energy. It’s a great way to feel full and satisfied without over doing it on the calories.

We’ve then added carrot, tomato and coriander but you can also add black beans, corn kernels and avocado as delicious additions to this easy mid-week meal. it’s also lovely with a light sprinkle of cheese and dollop of sour cream if their required additions to your Mexican meal.

Nachos with a Twist

Ingredients
  

  • 500 g beef, mince
  • 1 sachet taco seasoning GF if required
  • 1 can beans, kidney, canned drained, rinsed and slightly mashed
  • 1 jar tomato passata sauce GF if required
  • ½ cabbage, red finely chopped
  • 1 carrot
  • 2 tomato, common diced
  • ¼ bunch coriander, fresh roughly chopped

Instructions
 

  • Heat a non-stick pan over medium to high heat and cook the mince. Stir through the sachet of taco seasoning and cook for a further minute. Add the kidney beans and tomato passata and simmer over low heat until the mixture reduces slightly and starts to thicken.
  • Keep stirring the mince every few minutes and slightly mash the kidney beans to release their starch and help it thicken further. Simmer for 10 minutes over low heat.
  • Meanwhile, prepare all the other ingredients. Combine the cabbage and carrot in a bowl and divide evenly over 4 plates.
  • Serve the mince mixture over the four plates on top of the cabbage and carrot. Top with tomato and coriander and other ingredients you might like to use.
  • Serve and enjoy!
