Pork and Asian Greens with Brown Rice

Ingredients
  

  • 1 tbsp oil, peanut
  • 420 g pork, steak, lean chopped into small chunks
  • 2 clove garlic crushed
  • 1 chilli, red finely chopped (remove seeds for milder heat)
  • ½ bunch choy sum roughly chopped
  • 1 bunch bok choy roughly chopped
  • 1 bunch broccoli, Chinese roughly chopped
  • 250 g mushroom, button cut into quarters
  • 2 tbsp oyster sauce GF if required
  • 3 cup brown rice and quinoa, instant

Instructions
 

  • Cook brown rice according to packet instructions. Separate amongst 4 plates.
  • Meanwhile, heat the oil in a large frying pan or wok. Add the garlic and chilli and sauté over medium heat for 1 minute. Add the pork and sauté for a further for 5 minutes.
  • Add the mushrooms to the pan and cook for a further 2-3 minutes. Stir through oyster sauce.
  • Add the choy sum, bok choy and Chinese broccoli to the pan. Sauté until they are wilted and warmed through. This only takes 1-2 minutes.
  • Divide amongst the four plates with the rice. Serve and enjoy!
