Roast Chicken and Broccoli

Ingredients
- 200 g potato, medium
- ½ head broccoli
- 60 g beans, green
- 120 g chicken, breast, cooked
Instructions
- Root veggies do just fine in the microwave! Poke holes in the skin of the potatoes (or they might explode) and wrap loosely in a paper towel. Microwave for about 4-6 minutes depending on size. Give them a squeeze and if they feel soft, they’re done!
- Cut florets off of the broccoli and top and tail the beans. Steam these however you like. We suggest a microwave safe dish with a little bit of water for 3-4 minutes. If the container doesn’t have a vent, leave a corner popped open.
- Cut/shred the chicken and serve it with the potatoes and steamed greens.
