Summer time means BBQ time! Some of my greatest memories in life have revolved around the good old fashioned barbie. BBQ’s don’t have to be unhealthy. In fact,  if you plan them well and use a little creativity you can put on a whopper of a barbie thats both healthy and delicious!

One of my favourite BBQ foods is the kebab. The great thing about kebabs is that you can put anything that you like on them and make them exactly to your preference. Give these Spanish Chicken and Chorizo Kebabs a go this summer. I’ve served them with an avocado salsa but they go great with spiced couscous or a fresh garden salad. Happy eating!

Spanish Chicken and Chorizo Kebabs

Ingredients
  

  • 400 g chicken, breast chopped into bite-sized pieces
  • 1 sausage, chorizo thinly sliced
  • 2 capsicum, any chopped into bite-sized pieces
  • 1 onion, red chopped into bite-sized pieces
  • 1 lemon juice of
  • 1 tsp paprika, spanish
  • 1 clove garlic crushed
  • ½ tbsp oil, olive

Instructions
 

  • Combine the lemon juice, paprika, garlic, olive oil, salt and pepper in a small bowl and mix together. Add the chicken pieces. Toss to coat the chicken well and set aside for 30 minutes to marinate.
  • Thread the chicken, chorizo, capsicum and onion onto skewers, alternating as you go.
  • Spray a chargrill or BBQ with olive oil and cook the kebabs for 3-4 minutes each side until the chicken is cooked through.
  • Serve with a fresh garden salad or grilled vegetables.
