Thanksgiving has come and gone for our American friends. And while the annual tradition of giving thanks hasn’t taken off here in Australia, I’ve noticed a few other US staples sneaking in. One that I’m particularly thankful for is Pumpkin Spice flavoured goods. Who knew pumpkin could play both savoury and sweet roles. Not only will these Spiced pumpkin pie oats make you fall in love with the pumpkin spice, but they’re also jam packed with fibre, healthy fats and just enough carbohydrates to keep you running till your next meal. Bonus points for also including a serving of vegetables at breakfast!

Spiced Pumpkin Pie Oats

Ingredients
  

  • 100 g pumpkin baked or roasted
  • ½ tsp cinnamon
  • ½ tsp ginger, spice, ground
  • tsp clove, ground
  • ¼ tsp nutmeg spice
  • 1 tsp stevia or sweetner of choice, optional
  • ½ cup oats, rolled quick cook
  • 5 g pumpkin seeds (1 tsp)
  • 10 g pecans

Instructions
 

  • Combine roasted pumpkin, cinnamon, ground ginger, cloves, nutmeg and stevia in a small bowl and mash with a fork or use a stick blender to blitz.
  • Place oats in a microwave safe bowl and add enough water to reach ~1cm above the oats.
  • Microwave oats and water for 2 ½ minutes on high, until oats have thickened/absorbed all the water. Cooking times will vary depending on microwave and oat consistency preference.
  • Stir spiced pumpkin puree through oats.
  • If thicker consistency is preferred, microwave for an additional minute.
  • Top with pumpkin seeds and pecans.
