This recipe was inspired by a very special person in my life. She’s the pastor at the church I attend and has mentored me spiritually for the past two years. She’s just amazing.

One evening we had dinner with her and her husband and she served us this incredible warm bean salad with a delicious creamy dressing. It was divine. It turns out it was super simple, super healthy and could be a filling, satisfying meal all on it’s own. It’s a great source of fibre, calcium, magnesium, phosphorous, zinc, healthy fats and heaps more plus the creamy goats cheese and crunchy peas and almonds are the absolute best combination. For only 4 ingredients its a healthy meal in a flash!

Warm and Creamy Bean Salad

Ingredients
  

  • 200 g beans, 4 bean mix, canned drained and rinsed
  • 60 g cheese, goats
  • 1 cup sugar snap peas blanched
  • 20 g almonds, flaked

Instructions
 

  • Add the sugar snap peas to a heat proof bowl and cover with boiling water. Allow to stand for 2-3 minutes. Meanwhile, drain and rinse the 4 bean mix under hot water. Drain the sugar snap peas and add to the beans.
  • Mix through the goats cheese. It will melt and make a lovely creamy dressing. Sprinkle with the almonds and serve.
