Ingredients
2eggwhole
⅛cupmilk, any
¼capsicum, anydiced
20gmushroom, commonthinly sliced (2 small)
¼cupspinach, babyshredded
20gcheese, fetacrumbled
salt and pepperto taste
Instructions
Crack the eggs into a bowl. Add the milk and season with salt and pepper. Set aside.
Heat a non-stick frying pan over high heat. Add the vegetables and sauté for 1-2 minutes.
Pour the egg mixture over the vegetables and sprinkle with feta. Cook for another 2-3 minutes. Flip in half and slide onto a plate. Serve immediately. Enjoy!
