Ingredients

  • 70 g flour, wholemeal, self-raising (½ cup)
  • 70 g flour, wholemeal, plain (½ cup)
  • 1 cup oats, rolled
  • cup coconut, shredded
  • cup sugar, brown
  • 70 g raisins (⅓ cup)
  • 70 g goji berries, dried (⅓ cup)
  • 70 g chocolate chips, dark (⅓ cup)
  • 1 tbsp sunflower seeds
  • 20 g pumpkin seeds sunflower, pumpkin, linseed (1 tbsp)
  • 1 tbsp linseeds
  • cup milk, any low-fat
  • 125 g butter melted
  • 1 egg lightly beaten

Instructions

  • Preheat oven to 180 degrees Celsius. Line an over tray with baking paper, allowing it to overhang.
  • Add both the flours, oats, coconut, brown sugar, raisins, goji berries, chocolate chips and mixed seeds into a large mixing bowl and stir to combine.
  • Make a well in the centre and add the egg, milk and melted butter. Use a wooden spoon and stir until well combined. Evenly spread and press the mixture into the oven tray and smooth the top. Bake in the oven for 18 minutes.
  • Allow to completely cool in the fridge before serving (although it is quite yummy slightly warm – just mushy!)
