½cabbage, redfinely chopped
1carrot
2tomato, commondiced
¼bunchcoriander, freshroughly chopped
Instructions
Heat a non-stick pan over medium to high heat and cook the mince. Stir through the sachet of taco seasoning and cook for a further minute. Add the kidney beans and tomato passata and simmer over low heat until the mixture reduces slightly and starts to thicken.
Keep stirring the mince every few minutes and slightly mash the kidney beans to release their starch and help it thicken further. Simmer for 10 minutes over low heat.
Meanwhile, prepare all the other ingredients. Combine the cabbage and carrot in a bowl and divide evenly over 4 plates.
Serve the mince mixture over the four plates on top of the cabbage and carrot. Top with tomato and coriander and other ingredients you might like to use.
