Ingredients
300gpineapple, freshskin removed, chopped into chunks
1limeremove the skin, use the flesh
2tbspcoconut milk, canned
¾cupcoconut water
Instructions
Place all the ingredients into a blender and blend for 2-3 minutes until smooth and frothy.
Pour into a glass, sprinkle with a little lime rind and decorate with a sprig of mint or a wedge of pineapple and serve immediately for a cool, refreshing drink.
