Remove the green stalks from the strawberries and place them in a blender or food processor. Blend until smooth.
Place the strawberry puree, flour, eggs, milk, maple syrup and a pinch of salt in a bowl and using an electric mixer, beat until the mixture is well-combined.
If your kids are fine with food colouring, you can add 1-2 drops of red colour at this point to boost the colour. Keep blending until the colour is evenly distributed.
In a non-stick pan over low heat, add 1 tbsp. of mixture to make one mini pikelet. Repeat with more mixture and try to fit as many mini pikelets in the pan as you can. After 2-3 minutes, once they’ve had a few bubbles pop on top, flip the pikelets over. Cook for a further 1-2 minutes and then remove from the heat to cool. Repeat with the remaining mixture.
Store in the fridge. Wrapping them up like a present in baking paper with a little red heart completes the treat!
