Ingredients

flour, wholemeal, self-raising

buttermilk

lightly beaten
oil, olive, spray

yoghurt, natural

Instructions
In a small frying pan, melt butter over medium heat. Add sugar and stir until dissolved.
Add bananas and vanilla extract and stir until golden brown and soft. Set aside.
In mixing bowl combine flour, buttermilk and eggs and beat with a whisk or electric beater until smooth.
Lightly spray a fry pan with olive oil and cook 1/4 cup for each pancake.
Serve 3-4 pancakes topped with carmelised bananas and yoghurt. Enjoy!
