When I get to a Friday evening, I’m keen for ‘weekend food’. Typically, this phrase means burgers, chips and aioli, pizza, beer, cider, wine, chocolate and ice cream. Anything I’ve missed? It’s totally fine to consume these foods occasionally, I certainly do, but if your goals are weight loss, reducing tummy fat, reducing cholesterol and managing your blood sugars, staying consistent with a healthy eating pattern, even over the weekend is really important.

Rather than begrudgingly cooking up steamed chicken and vegetables for Friday night dinner, which may not seem overly exciting, plan yourself some ‘healthed’ up ‘weekend food’! Yes, healthed is not a word but I’m claiming it as part of my vocabulary today!

One of my favourite ‘healthed’ up foods for Friday night is burgers! I really enjoy making them from scratch. It’s heaps easier than you think and when you pop a delicious, home made meat patty into a grainy bread roll with lots of salad ingredients, you’ve got a delicious meal of ‘weekend’ food that’s healthy and nourishing as well! Enjoy!

Basil and Garlic Pork Burgers

Ingredients
  

  • 500 g pork, mince
  • 1 onion, red finely chopped
  • 3 clove garlic crushed
  • ½ bunch basil, fresh finely chopped
  • ¼ cup flour, wholemeal, plain
  • 1 egg
  • ½ tbsp oil, olive

Instructions
 

  • Place the pork mince, onion, garlic, basil, flour and egg in a bowl. Mix thoroughly to combine.
  • Roll into 6 large burger patties.
  • Heat the oil in a large frying pan or on a BBQ plate. Cook the burger patties over medium heat for 3-4 minutes each side until golden on the outside and cooked through.
  • Serve on it’s own with a side of vegetables or in a grainy bread roll with salad as pictured above! Yum!
    Note: It can be refrigerated once cooled and re-heated for subsequent meals.
