Ingredients
  

  • 60 g hibiscus flowers, dried
  • 1 stick cinnamon
  • 50 g ginger, fresh sliced
  • 10 cloves, whole
  • 2500 ml water
  • sugar to taste

Instructions
 

  • Put all ingredients except for sugar in a large saucepan. 
  • Bring to a boil, then turn down the heat and simmer, covered, for 10 minutes. 
  • Taste. If you would like to sweeten it, add sugar to your liking and let simmer for a further 5 minutes. If not, proceed to next step. 
  • Remove from heat. Leave to cool for at least 1 hour, strain, and serve with ice. Note: if you are in a rush you could brew the karkanji with only 2 litres of water and stir in 2 cups of ice to cool it down before straining and serving with ice.
