Ingredients

  • 90 g rice flour
  • 100 g sugar, caster
  • 1/2 tbsp cinnamon
  • 1/2 tbsp anise seeds, ground (can use ground star anise instead)
  • 1/2 tbsp caraway seeds, ground
  • 1000 ml water
  • 25 g shredded coconut
  • 60 g almonds, raw roughly chopped
  • 60 g walnuts, raw roughly chopped
  • 60 g pistachios roughly chopped
  • 30 g pine nuts

Instructions

  • Place rice flour, sugar and spices in a large saucepan, stirring to combine.
  • While still stirring the mix, slowly pour in the water.
  • Once ingredients are combined, cook on the stove over a low heat for around 20 minutes, or until thickened. Make sure you continue to stir while cooking to avoid clumps forming or the mix sticking to the base of the saucepan.
  • Pour the meghli into individual serving bowls or glasses and allow to cool.
  • Refrigerate for at least 4 hours.
  • When ready to serve, top with coconut and nuts.
