Ingredients
  

  • 1000 g potato, starchy peeled
  • 2 eggs
  • 1 pinch salt
  • oil, such as sunflower or rice bran oil for frying

Instructions
 

  • Grate potatoes into a sieve set over a bowl. 
  • Allow excess liquid from potatoes to drain for 5 minutes. 
  • In a large bowl, beat eggs. Add salt and the drained grated potato; stir well to combine. 
  • Cover the bottom of a frying pan with oil so that it is enough for shallow frying; heat over medium-high heat. 
  • When the oil is hot, drop ¼ cup sized heaps of the mixture into the oil; flatten with a spatula and cook in batches, turning, until both sides are browned and they are cooked through (about 5 minutes). 
  • Drain on paper towel and serve hot.
