Latkes
Recipe Serves 6
Ingredients
- 1000 g potato, starchy peeled
- 2 eggs
- 1 pinch salt
- oil, such as sunflower or rice bran oil for frying
Instructions
- Grate potatoes into a sieve set over a bowl.
- Allow excess liquid from potatoes to drain for 5 minutes.
- In a large bowl, beat eggs. Add salt and the drained grated potato; stir well to combine.
- Cover the bottom of a frying pan with oil so that it is enough for shallow frying; heat over medium-high heat.
- When the oil is hot, drop ¼ cup sized heaps of the mixture into the oil; flatten with a spatula and cook in batches, turning, until both sides are browned and they are cooked through (about 5 minutes).
- Drain on paper towel and serve hot.
