Sieben Kräutersuppe (Seven Herb Soup)
Recipe Serves 4
Ingredients
- 14 g butter, unsalted
- 1 onion finely chopped
- 1 leek white part only, sliced
- 300 g potato, waxy e.g. Dutch cream, Nicola; diced
- 125 ml wine, white
- 875 ml stock, vegetable or water
- 2 cup spinach, baby chopped
- 1 cup parsley, any, fresh chopped
- 1 cup chives chopped
- ½ cup dill, fresh chopped
- ½ cup celery, leaves chopped
- ½ cup rocket chopped
- 125 ml milk
- salt to taste
- pepper to taste
Instructions
- Melt butter in large saucepan/soup pot.
- Sauté onion, leek and potatoes until onion starts to soften.
- Add in wine; once it has boiled down add in water/stock.
- Bring to the boil, covered, and then simmer for approximately 20 minutes, or until potatoes are tender.
- Add the remaining greens and herbs and simmer, covered, for a further 10 minutes.
- Add milk, salt (if desired) and pepper, then puree with a stick blender. Serve and enjoy!
