Sieben Kräutersuppe (Seven Herb Soup)

Ingredients
  

  • 14 g butter, unsalted
  • 1 onion finely chopped
  • 1 leek white part only, sliced
  • 300 g potato, waxy e.g. Dutch cream, Nicola; diced
  • 125 ml wine, white
  • 875 ml stock, vegetable or water
  • 2 cup spinach, baby chopped
  • 1 cup parsley, any, fresh chopped
  • 1 cup chives chopped
  • ½ cup dill, fresh chopped
  • ½ cup celery, leaves chopped
  • ½ cup rocket chopped
  • 125 ml milk
  • salt to taste
  • pepper to taste

Instructions
 

  • Melt butter in large saucepan/soup pot. 
  • Sauté onion, leek and potatoes until onion starts to soften. 
  • Add in wine; once it has boiled down add in water/stock. 
  • Bring to the boil, covered, and then simmer for approximately 20 minutes, or until potatoes are tender. 
  • Add the remaining greens and herbs and simmer, covered, for a further 10 minutes. 
  • Add milk, salt (if desired) and pepper, then puree with a stick blender. Serve and enjoy!
