Chicken Pesto Pasta Salad

Ingredients
  

  • 360 g chicken diced
  • 80 g dried chickpea pasta
  • ½ tbsp oil, olive
  • 1 tbsp pesto sauce
  • 2 cups rocket
  • 1 small roma tomato diced

Instructions
 

  • Heat olive oil in frypan and cook chicken for 8-10 mins, or until well cooked. Set aside to cool.
  • Bring water to boil in saucepan and add pasta. Cook as per package instructions
  • Drain pasta and rinse with cold water.
  • Combine pasta, rocket, tomato, chicken and pesto sauce in large bowl and toss together.
  • Divide into 2 bowls to serve. Enjoy!
