Chicken Pesto Pasta Salad

Ingredients
- 360 g chicken diced
- 80 g dried chickpea pasta
- ½ tbsp oil, olive
- 1 tbsp pesto sauce
- 2 cups rocket
- 1 small roma tomato diced
Instructions
- Heat olive oil in frypan and cook chicken for 8-10 mins, or until well cooked. Set aside to cool.
- Bring water to boil in saucepan and add pasta. Cook as per package instructions
- Drain pasta and rinse with cold water.
- Combine pasta, rocket, tomato, chicken and pesto sauce in large bowl and toss together.
- Divide into 2 bowls to serve. Enjoy!
