Melomakarona
Recipe Serves 30
Ingredients
Biscuits
- 250 ml oil, sunflower or rice bran
- 250 ml juice, orange freshly squeezed
- 1/2 tsp nutmeg
- 2 tsp cinnamon
- 100 g sugar, caster
- 4 g baking powder
- 350 g semolina, medium
Syrup
- 300 g honey
- 100 g sugar, caster
- 125 ml water
- 5 cloves clove
- 1 stick cinnamon
- 60 ml juice, lemon freshly squeezed
Topping
- 100 g walnuts, raw finely chopped
- 1 tsp cinnamon
Instructions
- In a large bowl, combine oil, orange juice, spices, sugar and baking powder using a whisk.
- Fold in semolina. You should have a light dough.
- Roll tablespoons of the dough into ovals and place on lined baking tray.
- Bake in a preheated oven at 180˚C for 25 minutes, or until firm to touch.
- Allow biscuits to cool slightly on the trays while you make the syrup.
- For the syrup, place all syrup ingredients into a saucepan over medium-high heat. Stir until sugar dissolves (around 5 minutes).
- Bring syrup to the boil then simmer for around 4 minutes or until syrup thickens slightly.
- Combine walnuts and cinnamon.
- Using a slotted spoon, dip slightly cooled biscuits into the hot syrup then return them to the baking tray.
- Top syrupy biscuits with walnut mix.
- Best stored in an airtight container in the fridge.
