Ingredients
  

Biscuits

  • 250 ml oil, sunflower or rice bran
  • 250 ml juice, orange freshly squeezed
  • 1/2 tsp nutmeg
  • 2 tsp cinnamon
  • 100 g sugar, caster
  • 4 g baking powder
  • 350 g semolina, medium

Syrup

  • 300 g honey
  • 100 g sugar, caster
  • 125 ml water
  • 5 cloves clove
  • 1 stick cinnamon
  • 60 ml juice, lemon freshly squeezed

Topping

  • 100 g walnuts, raw finely chopped
  • 1 tsp cinnamon

Instructions
 

  • In a large bowl, combine oil, orange juice, spices, sugar and baking powder using a whisk.
  • Fold in semolina. You should have a light dough.
  • Roll tablespoons of the dough into ovals and place on lined baking tray.
  • Bake in a preheated oven at 180˚C for 25 minutes, or until firm to touch.
  • Allow biscuits to cool slightly on the trays while you make the syrup.
  • For the syrup, place all syrup ingredients into a saucepan over medium-high heat. Stir until sugar dissolves (around 5 minutes). 
  • Bring syrup to the boil then simmer for around 4 minutes or until syrup thickens slightly.
  • Combine walnuts and cinnamon.
  • Using a slotted spoon, dip slightly cooled biscuits into the hot syrup then return them to the baking tray.  
  • Top syrupy biscuits with walnut mix. 
  • Best stored in an airtight container in the fridge.
