Mombasa Pumpkin Pudding

Ingredients
  

  • 2000 g pumpkin, Queensland Blue skin removed
  • 200 g sugar, caster
  • 250 ml coconut milk
  • 2 g cinnamon

Instructions
 

  • Cube the pumpkin.
  • Steam the pumpkin for 5-10 minutes.
  • Place the steamed pumpkin and sugar in a saucepan over low-medium heat and stir until the sugar has dissolved into the pumpkin.
  • Add coconut milk and cardamom and cook, stirring often, until the mixture has thickened to a pudding-like consistency.
  • Serve warm or chilled.
