Mombasa Pumpkin Pudding

Ingredients
- 2000 g pumpkin, Queensland Blue skin removed
- 200 g sugar, caster
- 250 ml coconut milk
- 2 g cinnamon
Instructions
- Cube the pumpkin.
- Steam the pumpkin for 5-10 minutes.
- Place the steamed pumpkin and sugar in a saucepan over low-medium heat and stir until the sugar has dissolved into the pumpkin.
- Add coconut milk and cardamom and cook, stirring often, until the mixture has thickened to a pudding-like consistency.
- Serve warm or chilled.
