Pasta with Tomato and Basil Meat Sauce

Ingredients
  

  • 250 g lean mince
  • 80 g dried gluten-free pasta
  • 1 tbsp garlic-infused olive oil
  • 2 medium carrots, diced
  • 1 bunch fresh basil
  • 200 g tinned whole tomatoes (1/2 can)
  • 1 tbsp tomato paste
  • ½ cup Massel beef stock

Instructions
 

  • Heat garlic-infused oil in saucepan on medium heat setting
  • Add carrots and cook for 5 mins or until soft.
  • Add mince and cook until brown.
  • Add tinned tomatoes, tomato paste and stock to the saucepan and bring to the boil. Reduce to low heat setting and simmer for 15-20 mins.
  • Add basil to the saucepan and simmer for an additional 2 mins. 
  • Cook gluten-free pasta in boiling water as per packet instructions.
  • Drain pasta and toss through pasta sauce.
