Pasta with Tomato and Basil Meat Sauce
Recipe Serves 2
Ingredients
- 250 g lean mince
- 80 g dried gluten-free pasta
- 1 tbsp garlic-infused olive oil
- 2 medium carrots, diced
- 1 bunch fresh basil
- 200 g tinned whole tomatoes (1/2 can)
- 1 tbsp tomato paste
- ½ cup Massel beef stock
Instructions
- Heat garlic-infused oil in saucepan on medium heat setting
- Add carrots and cook for 5 mins or until soft.
- Add mince and cook until brown.
- Add tinned tomatoes, tomato paste and stock to the saucepan and bring to the boil. Reduce to low heat setting and simmer for 15-20 mins.
- Add basil to the saucepan and simmer for an additional 2 mins.
- Cook gluten-free pasta in boiling water as per packet instructions.
- Drain pasta and toss through pasta sauce.
