This Prawn Rolls recipe is a #HubSquad submission from one of our lovely members Laura! We suggested a bread roll portion to match our carbohydrate serves, bumped up the prawn portion to be 1 full serve of protein and added in more vegetables to ensure 2 serves of veg from each serve. Prawn Rolls
Recipe Serves 4 people
Ingredients
- ¼ cup mayonnaise, whole egg
- 30 g tomato sauce
- ½ lemon juiced
- 24 prawns, cooked peeled
- 4 bread roll, wholegrain 70g per roll, halved
- 2 cup lettuce, leaves, mixed
- 1 cucumber, Lebanese thinly sliced lengthways
- ½ capsicum, red thinly sliced lengthways
- 1 tbsp chives chopped
Instructions
- Place mayonnaise, tomato sauce and lemon juice in a large bowl and whisk to combine.
- Add prawns and toss to coat.
- Divide lettuce, cucumber and capsicum between the rolls. Top with prawn mixture and scatter over chives to serve.
