Roast Chicken with Maple Glazed Pumpkin

Ingredients
  

  • 1.2-1.4 kg whole chicken
  • 2 tbsp fresh thyme chopped
  • ½ jap pumpkin
  • ½ tsp ground all spice
  • 1 tbsp maple syrup
  • 1 tsp olive oil

Instructions
 

  • Preheat oven to 200oC.
  • Use kitchen scissors to cut along the backbone of the chicken, then press on the breastbone to flatten it.
  • Cut the pumpkin into 4 wedges.
  • Mix thyme, all spice, maple syrup and olive oil in a large bowl, then toss the pumpkin wedges through to coat.
  • Place the chicken and pumpkin on separate baking trays, then bake for 35-45 mins, or until chicken is cooked through. Turn the pumpkin wedges over ½ way (i.e. after 20mins).
  • Remove from oven and peel skin from chicken before serving.
