Roast Chicken with Maple Glazed Pumpkin
Recipe Serves 4
Ingredients
- 1.2-1.4 kg whole chicken
- 2 tbsp fresh thyme chopped
- ½ jap pumpkin
- ½ tsp ground all spice
- 1 tbsp maple syrup
- 1 tsp olive oil
Instructions
- Preheat oven to 200oC.
- Use kitchen scissors to cut along the backbone of the chicken, then press on the breastbone to flatten it.
- Cut the pumpkin into 4 wedges.
- Mix thyme, all spice, maple syrup and olive oil in a large bowl, then toss the pumpkin wedges through to coat.
- Place the chicken and pumpkin on separate baking trays, then bake for 35-45 mins, or until chicken is cooked through. Turn the pumpkin wedges over ½ way (i.e. after 20mins).
- Remove from oven and peel skin from chicken before serving.
