Smashed Eggs with Avocado Sandwich
Sandwiches don’t have to be boring and can contain much more than just cheese or vegemite.
Servings: 1 person
- 2 egg hard boiled
- ¼ avocado
- 20 g cheese, feta (soft)
- 1 cup lettuce, leaves, mixed
- 1 bread roll, wholegrain (or wholemeal)
- Mash the eggs, avocado and feta in a small bowl. Spread thickly over one half of the roll.
- Top the egg mixture with salad leaves and place the other half of the roll on top. Serve. Enjoy!
