Spinach, Pumpkin and Chicken Pizza

Ingredients
- 190 g pizza base, optional gluten free
- ½ tbsp garlic-infused olive oil
- 90 g chicken breast or thigh, or 1/2 cup shredded roast chicken
- ¼ jap pumpkin
- 1 bunch English spinach, roughly chopped
- 1 cup grated reduced fat Colby or Tasty cheese
- 2 tbsp tomato paste
Instructions
- Preheat oven to 180°C.
- Place the chicken and jap pumpkin on baking tray. Drizzle with half the garlic infused oil and bake for 20 mins.
- Once cooked, shred the chicken and mash the pumpkin.
- Meanwhile, heat remaining garlic-infused oil in pan over medium heat.
- Add spinach and cook for 3-5 mins, or until fully wilted.
- Line baking tray with baking paper and place pizza base in the tray.
- Spread tomato paste over pizza base.
- Next, spread mashed roasted pumpkin over the pizza base.
- Then layer base with spinach.
- Add chicken and then sprinkle over the grated cheese.
- Place in the oven and bake at 200°C for 8-10 minutes, or until cheese has melted and started to brown.
- Cut pizza into slices and divide onto two plates.
