Steak with Roasted Root Vegetables

Ingredients
  

  • 300 g steak, such as eye fillet or sirloin 1x 150g steak per serving
  • 1 tbsp garlic-infused olive oil
  • 2 parsnips sliced into 2cm segments
  • 2 potato, small cut into ~2cm cubes
  • 1 medium sized swede cut into 2cm cubes
  • 2 carrots sliced into ~2cm segments
  • 1 tbsp dried oregano
  • 1 tbsp mustard (optional) any

Instructions
 

  • Pre heat oven to 180oC.
  • Place vegetables of oven tray and drizzle over the ½ the oil.
  • Sprinkle oregano on top.
  • Bake for 15-20 mins.
  • Meanwhile, heat remaining oil on medium high heat in frypan.
  • Cook steak for 4-6 mins each side for a medium steak. Adjust cooking time if you prefer rarer meat or well done.
  • Remove steak from heat and allow to rest for 5 mins before serving.
  • Place steak and roasted vegetables on each plate. Serve with mustard (optional).
