Steak with Roasted Root Vegetables
Recipe Serves 2
Ingredients
- 300 g steak, such as eye fillet or sirloin 1x 150g steak per serving
- 1 tbsp garlic-infused olive oil
- 2 parsnips sliced into 2cm segments
- 2 potato, small cut into ~2cm cubes
- 1 medium sized swede cut into 2cm cubes
- 2 carrots sliced into ~2cm segments
- 1 tbsp dried oregano
- 1 tbsp mustard (optional) any
Instructions
- Pre heat oven to 180oC.
- Place vegetables of oven tray and drizzle over the ½ the oil.
- Sprinkle oregano on top.
- Bake for 15-20 mins.
- Meanwhile, heat remaining oil on medium high heat in frypan.
- Cook steak for 4-6 mins each side for a medium steak. Adjust cooking time if you prefer rarer meat or well done.
- Remove steak from heat and allow to rest for 5 mins before serving.
- Place steak and roasted vegetables on each plate. Serve with mustard (optional).
