Spring time has to be one of my most favourite times of the year. As the season changes we get to say hello to new Australian produce and fresh new meal ideas for our tables.

Asparagus is a fabulous spring time vegetable that is highly versatile and delicious. The Australian season is relatively short, so you’ve got to make the most of them being in Aussie markets.

Warm Asparagus and Pink Lady Salad

Ingredients
  

  • 1 tbsp oil, olive
  • 1 clove garlic thinly sliced
  • 1 bunch asparagus, fresh woody ends removed
  • 50 g cheese, feta
  • 1 apple, pink lady quartered and then thinly sliced
  • 1 tbsp pine nuts lightly toasted

Instructions
 

  • Heat the oil in a frying pan over low heat.
  • Add the garlic into the pan and toss for 1-2 minutes.
  • Add the asparagus into pan and gently toss through the oil until warmed through, about 3 minutes.
  • Arrange the asparagus on a serving plate. Top with apple slices, feta and toasted pine nuts.
  • Drizzle the remaining oil and garlic over the whole plate.
